Maitake (Grifola frondosa) is called oak mushroom in Dutch and hen of the woods in English, the chicken of the forest, because its grey-brown, fan-shaped caps resemble a brooding hen. It grows at the base of old oaks and can grow into a cluster weighing several kilos.

In Japan, maitake means 'dancing mushroom'. According to legend, foragers danced with joy when they found one, because in feudal Japan maitake was traded for its weight in silver. Locations were kept secret and only passed on to one's own children. It wasn't until the 1980s that it was possible to cultivate it on a large scale in Japan.

Scientists are also very familiar with maitake. It naturally contains special beta-glucans, such as the D-fraction and grifolan, which have been studied for decades.
